Microwave Caramel Corn
- 3 quarts popped corn
- 1 c. brown sugar
- 1/4 c. corn syrup (you can substitute honey)
- 1 stick butter (or oleo)
- 1 tsp. vanilla
- 1/2 tsp. baking soda
Spray the inside of a brown paper bag with non-stick cooking spray. Add popped corn. In a 1 1/2 quart casserole dish, m brown sugar, syrup, oleo & vanilla. Microwave on high for 4 minutes, uncovered. Stir in soda until frothy. Pour mixture over popcorn in bag. Roll bag & shake well. microwave on high for 1 1/2 minutes, then shake. Microwave for 1/2, then shake. microwave for 1/2 minute more, then shake. Tear bag open & spread out to cool. Break apart. Enjoy!
