Molasses Cookies

I find that many people do not seem to make molasses cookies anymore.  My kids love them –  they prefer them over chocolate chip!  I made several batches of these & sold them at a local bazaar last week.  They seemed to be a big hit & a friend asked me to post the recipe on my blog – so here it is.

Molasses Cookies

Ingredients

  • 3/4 c. shortening
  • 1 c. sugar
  • 1/4 c. molasses
  • 1 egg
  • 2 tsp. baking soda
  • 1/2 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. flour

Directions

  • Melt shortening; add sugar, egg, and molasses.
  • Beat well
  • Add dry ingredients; mix well
  • Chill
  • Form 1 inch balls, roll in sugar
  • Put on greased pan 2 inches apart
  • Bake at 375 for 8-10 minutes (they are done when they start to crack on top)

 

 

Microwave Caramel Corn

I got this recipe from my sister-in-law years ago.  I usually make a batch around the holidays & several other times a year.  It is super easy & super good!

Microwave Caramel Corn

Ingredients:

  • 3 quarts popped corn
  • 1 c. brown sugar
  • 1/4 c. corn syrup (you can substitute honey)
  • 1 stick butter (or oleo)
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda

Directions:

Spray the inside of a brown paper bag with non-stick cooking spray.  Add popped corn.  In a 1 1/2 quart casserole dish, m brown sugar, syrup, oleo & vanilla.  Microwave on high for 4 minutes, uncovered.  Stir in soda until frothy.  Pour mixture over popcorn in bag.  Roll bag & shake well.  microwave on high for 1 1/2 minutes, then shake.  Microwave for 1/2, then shake.  microwave for 1/2 minute more, then shake.  Tear bag open & spread out to cool.  Break apart.  Enjoy!

This is a favorite at our house!  Great for movie night!  Hope you enjoy it as much as we do!
