I find that many people do not seem to make molasses cookies anymore. My kids love them – they prefer them over chocolate chip! I made several batches of these & sold them at a local bazaar last week. They seemed to be a big hit & a friend asked me to post the recipe on my blog – so here it is.
- 3/4 c. shortening
- 1 c. sugar
- 1/4 c. molasses
- 1 egg
- 2 tsp. baking soda
- 1/2 tsp. ginger
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. flour
- Melt shortening; add sugar, egg, and molasses.
- Beat well
- Add dry ingredients; mix well
- Form 1 inch balls, roll in sugar
- Put on greased pan 2 inches apart
- Bake at 375 for 8-10 minutes (they are done when they start to crack on top)
I got this recipe from my sister-in-law years ago. I usually make a batch around the holidays & several other times a year. It is super easy & super good!
Microwave Caramel Corn
- 3 quarts popped corn
- 1 c. brown sugar
- 1/4 c. corn syrup (you can substitute honey)
- 1 stick butter (or oleo)
- 1 tsp. vanilla
- 1/2 tsp. baking soda
Spray the inside of a brown paper bag with non-stick cooking spray. Add popped corn. In a 1 1/2 quart casserole dish, m brown sugar, syrup, oleo & vanilla. Microwave on high for 4 minutes, uncovered. Stir in soda until frothy. Pour mixture over popcorn in bag. Roll bag & shake well. microwave on high for 1 1/2 minutes, then shake. Microwave for 1/2, then shake. microwave for 1/2 minute more, then shake. Tear bag open & spread out to cool. Break apart. Enjoy!
