Mac & Cheese

I have stopped making “boxed” mac & cheese and now make it from scratch.  My kids have gone from “I don’t like this kind” to “Yum!  This is really good!”

I have found that it doesn’t take any longer to make than the boxed kind.  I can make the sauce while the noodles are cooking.  I came up with this recipe by combining a recipe I got on a box of Spartan elbow macaroni with the recipe we use to make mac & cheese at Hemlock Public Schools.

Mac & Cheese


  • 8 oz. elbow macaroni
  • 2 TBS butter or margarine
  • 2 TBS flour
  • 2 cups milk
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp prepared mustard’
  • 6 oz. shredded cheese  (I use 8 o

    z – we like it cheesy)


  • Cook macaroni until desired tenderness is reached
  • Mix next 8 ingredients in sprayed casserole dish
  • Cook in microwave 3 minutes; stir.  Continue cooking, stirring after every minute, until sauce starts to thicken
  • Add shredded cheese and stir until cheese is melted
  • Add macaroni and stir gently
  • Bake at 350 for 30 minutes (or cover & cook in microwave several minutes)

As I stated earlier, I make the sauce while the pasta is cooking.  In the summer I cook everything in the microwave (including pasta) and don’t have to heat up the house!  I even make this at the campground.   With a salad or fresh veggies & dip it’s a meal my kids love.
